Some rooms simply have gravity. Model Milk has pulled 17th Avenue toward it since 2011 — a former dairy where the milk was once pasteurized on site, now a dining room where Calgary’s idea of comfort food was quietly rewritten and the Sunday table became an institution again.

The Concept

The building belonged to the Model Milk dairy — Alberta’s first to deliver fresh milk by truck — and chef Justin Leboe kept its working-heritage honesty when he opened here. His kitchen refines rather than complicates: local and seasonal ingredients, an ever-evolving menu, technique from the fine-dining world applied to food people genuinely crave. Years on national best-of lists followed, along with Pigeonhole, the celebrated sister room steps away.

What to Order

Ask what form the Southern fried chicken has taken this season — it is reborn every few months, from Nashville-hot to chorizo-glazed with basil fry bread, and it remains the great group dish of the neighbourhood. The rest of the card rewards trust: seasonal starters built on Alberta farms, house pasta, desserts that wink at the dairy past. The Space
