The list is built by region rather than by fashion \u2014 the Americas, Africa, the islands and Asia \u2014 and it rotates with what is available, so new arrivals appear and disappear across the year: an Ethiopian Yirgacheffe, a Rwandan, a Bolivian, a Ugandan. Alongside them sit blends, dark roasts, decaf and flavoured coffees.<\/p>\n<p>That last sentence is the honest one, and it tells you exactly what kind of shop this is. A modern specialty bar would not put a flavoured coffee on the same shelf as a single-origin Yirgacheffe; this one does, because it was built to serve everybody in the neighbourhood rather than to win a competition. The style leans traditional \u2014 more roast development, more body, less of the bright acidity that the newer Calgary roasteries chase. If your reference point is a light Nordic-style filter, you will find this a different school. If your reference point is a good cup of coffee at home for forty years, you will find it exactly right.<\/p>\n<p>The practical strength of a room with the roaster in it is freshness in the literal sense. Bagged beans here have not travelled, warehoused or waited; the interval between the drum and the shelf is measured in a way that no distribution chain can match. Cold brew is worth knowing about too \u2014 it can be drunk in the room or taken away bottled, which is the shop quietly acknowledging that a good part of its trade walks out the door.<\/p>\n<h2><span class=\"ez-toc-section\" id=\"Whos_behind_it\"><\/span>Who&#8217;s behind it<span class=\"ez-toc-section-end\"><\/span><\/h2>\n<p>The business was started by Lech Wojakowski, who moved to Canada from Poland and opened the shop without any professional background in coffee at all. In the Calgary of the mid-1980s that was not unusual, because there was no local coffee industry to have a background in \u2014 the people who built the first roasteries here were, almost without exception, learning as they went. What is unusual is the ending: he is still behind it four decades later, and the shop has not been sold up, franchised out or reinvented.<\/p>\n<p>That continuity is the thing customers actually buy. Kensington has turned over repeatedly around this address \u2014 the strip has gained and lost dozens of businesses in the same period, including several coffee shops with far more money behind them \u2014 and the Roasterie has simply kept roasting. In a city that likes to describe its coffee scene in terms of championships and export wholesale, there is real value in the shop that measures itself in decades instead.<\/p>\n<h2><span class=\"ez-toc-section\" id=\"What_its_good_for\"><\/span>What it&#8217;s good for<span class=\"ez-toc-section-end\"><\/span><\/h2>\n<p>The single most useful thing to understand is that this is an errand as much as a sit-down. The strongest visit is the one where you come to buy beans: you look at what has just arrived, ask what it is like, have something at the bar while the order is weighed out, and leave with a bag. Nowhere else in the inner northwest gives you that conversation with someone who roasted the coffee themselves that week.<\/p>\n<p>For a short sit it works well \u2014 a coffee with one other person, a pause in the middle of a walk along the strip, a warm-up on a cold day when the roaster is running. For a long laptop shift it is a weaker choice: this is a compact retail room where the floor space is given to stock rather than to desks, and the traffic is people collecting orders. Nobody is going to throw you out, but the newer specialty rooms a few doors along the same strip are built for that and this one is not.<\/p>\n<p>The third scenario is the gift. A bag of freshly roasted single origin plus a brewer is one of the more reliable presents you can buy in Kensington, and the staff will talk you through matching one to the other \u2014 a service the supermarket aisle cannot provide.<\/p>\n<h2><span class=\"ez-toc-section\" id=\"The_room\"><\/span>The room<span class=\"ez-toc-section-end\"><\/span><\/h2>\n<p>It is a small, warm, cluttered room in the best sense of that word. Shelves carry antique grinders, old brewing devices and porcelain cups accumulated over decades, and the effect is a working museum rather than a designed interior: nothing here was chosen by a brand consultant, and it shows in the right way. The espresso machine sits as the centrepiece, and the sacks and stock are visible rather than hidden in a back room.<\/p>\n<p>The sensory argument is the roaster itself. When a batch is going, the smell fills the shop and spills onto the pavement outside, which is a genuinely different experience from a caf\u00e9 that receives its beans already roasted in a box. It also means the room has an industrial undertone \u2014 noise, heat, movement behind the counter \u2014 that is part of the charm and not everyone&#8217;s idea of a quiet corner.<\/p>\n<h2><span class=\"ez-toc-section\" id=\"With_your_coffee\"><\/span>With your coffee<span class=\"ez-toc-section-end\"><\/span><\/h2>\n<p>Food is not why this shop exists, and it does not pretend otherwise. There are things to have with a cup, but the counter space is committed to coffee, equipment and stock rather than to a bakery display or a kitchen. Anyone planning a full breakfast should plan it elsewhere on the strip and come here afterwards for the coffee, which is in any case the sequence most regulars follow.<\/p>\n<p>What the counter does carry alongside beans is brewing gear \u2014 AeroPress and its filters among other equipment \u2014 which is a far more honest reflection of the business than a pastry case would be. This is a shop for people who make coffee at home, staffed by people who can tell you how.<\/p>\n<h2><span class=\"ez-toc-section\" id=\"When_to_come\"><\/span>When to come<span class=\"ez-toc-section-end\"><\/span><\/h2>\n<p>Time your visit to a roast if you can. When the drum is working, the shop is at its most alive, the smell is the reason people stop in the street, and the staff have something new coming off to talk about. There is no schedule you can look up, but ask, and if a batch is running you will know from the doorway.<\/p>\n<p>Otherwise, the rhythms are Kensington&#8217;s own. Weekends bring the shopping and brunch crowd to the strip and the shop gets busy with it; a weekday is calmer and better for an unhurried conversation about what has just arrived. Around the winter holidays the bean and gift trade dominates, so expect a queue of people buying by the bag rather than by the cup.<\/p>\n<h2><span class=\"ez-toc-section\" id=\"Getting_there\"><\/span>Getting there<span class=\"ez-toc-section-end\"><\/span><\/h2>\n<p>The shop is on the Kensington strip in the Hillhurst-Sunnyside district, on the north side of the Bow River opposite downtown, and the Sunnyside CTrain station is a few minutes&#8217; walk. That combination \u2014 a walkable retail district with a train station in it \u2014 is why this stretch has supported independent shops for so long, and why you do not need a car to get here from anywhere on the CTrain line.<\/p>\n<p>From the core, walk across the river on one of the pedestrian bridges and up into the district. By bike, the riverside pathway passes just below. Driving is the usual Kensington story: metered spaces, permit zones on the residential side, and heavy competition at weekends \u2014 fine for a quick bean run, frustrating otherwise.<\/p>\n<h2><span class=\"ez-toc-section\" id=\"Good_to_know\"><\/span>Good to know<span class=\"ez-toc-section-end\"><\/span><\/h2>\n<p>Set expectations correctly and this is one of the most rewarding coffee stops in Calgary; set them wrongly and you will be disappointed for the wrong reasons. It is not a modern specialty bar. There are flavoured coffees on the shelf, the roast style is traditional, and the room is a shop rather than a lounge. What it offers instead is something no new opening can manufacture: four decades of the same people roasting in the same place.<\/p>\n<p>Two honest caveats. First, if you are shopping for the lightest, most delicate washed lots in the city, the newer roasteries within walking distance are a better match, and there is no shame in visiting both on the same afternoon.
