His kitchen refines rather than complicates: local and seasonal ingredients, an ever-evolving menu, technique from the fine-dining world applied to food people genuinely crave. Years on national best-of lists followed, along with Pigeonhole, the celebrated sister room steps away.<\/p>\n<h3><span class=\"ez-toc-section\" id=\"What_to_Order\"><\/span>What to Order<span class=\"ez-toc-section-end\"><\/span><\/h3>\n<p>Ask what form the Southern fried chicken has taken this season \u2014 it is reborn every few months, from Nashville-hot to chorizo-glazed with basil fry bread, and it remains the great group dish of the neighbourhood. The rest of the card rewards trust: seasonal starters built on Alberta farms, house pasta, desserts that wink at the dairy past.
